From Roasting to Brewing - The Tale of Ethiopian Coffee

In the annals of coffee history, a fascinating transformation unfolded in Ethiopia, the birthplace of coffee. It all began when a man brought cherries to a monastery, where monks initially dismissed them as the Devil's work and threw them into the fire. However, the beans' heavenly aroma while roasting led to their rescue. Crushed to extinguish the embers, they were placed in a jug with hot water for preservation. Later, the monks drank the brew, finding it helped them stay awake during nightly devotions. While this story is entertaining, it's likely that the nomadic Oromo people first discovered coffee's invigorating properties. Our Process

The Perfect Pick

Farmers visit each tree several times a week and only pick their cherries precisely when they are ready. They are delicately picked from the tree to maintain the quality of the picked fruit, the health of the plant and its yield in future seasons.

Fermentation and Drying

Farmers deliver their coffee cherries to the washing station, where a meticulous hand-sorting process removes under-ripe or damaged cherries. The cherries are then processed using either the washed or natural process before being evenly distributed on raised beds to dry. Here, coffee beans are regularly turned to ensure uniform drying.

In Transit

When the ideal moisture level is reached, the cherries are placed into hermetic bags to protect them from oxidization, foreign matter and pollution. Next, the coffee is transported to the warehouse for a short resting period in a controlled environment.

Signed, Sealed & Delivered

After resting in our warehouse, the dried cherries are hulled, passed through a gravity sorter, sieved by size, hand sorted several times for defective colours and proportions and finally graded and bagged ready for you to enjoy.
