Cupping Notes/Profile: Dried Fruit, Cranberry and Maple Syrup are dominant flavours with additional characteristics of Malt, Brown Spice and Tamarind. A good level of sweetness supports the acidity leaving any bitterness low in intensity.

The coffee cherries in this collective have been dried at one of our drying stations with a capacity of 450 raised beds. The drying station has a full time team of 8 people employed from the village throughout the season.
The cherries in this lot have been slow-dried at an altitude of more than 1800 meters above sea level. They have undergone a fermentation process which has taken more than 30 days to dry. The average sun exposure has been 5 hours per day which has helped develop a very dominant profile. This lot is a combination of two cultivars Dwairi and Udaini.
